bite sized lotus root pan cake
This is another korean style pancake made from lotus root.
I like texture of grated lotus root because it is like Mochi.
Ingredients (serves 3-4)
- 1 Lotus root (renkon) about 300g grated
- salt
- 2 tea spoon sesami oil
- 1 shiitake mushroom minced
- 1-2 scallion minced (green part)
- red pepper
- A
- 1table spoon of vinegar, soy sauce, water
- grated white toasted sesame
Recipe
- Mix grated lotus root and salt
- Heat pan with sesami oil and Add the lotus root (1 table spoon in each size) with lower heat. place shiitake mushroom, scallion, red peppr on the top and cook over low heat about 3-4 minutes.
- When the bottom of the pan cake golden brown, turn it over and cook another 2-3 minutes.
- Mix ingredients A, and serve with them.
