Colorful Tomato salad

This is my father’s favarite salad in summer time.
I cooked a lot when I was in Japan as he requested all the time.
oops, I started to get home sick……

ingredients

  • 1-2 tomato thinely sliced
  • 1 green bell pepper minced
  • 1 onion minced
  • salt, pepper
  • Dressing
    • 1 tablespoon Olive oil
    • 1 tablespoon Maple syrop or agave nector
    • 1 tablespoon Rice vinegar (Apple cider)
    • 1-2 tea spoon Lemon juice
    • salt, pepper

recipe

  1. Sprinkle salt over minced onion and add water to cover ingredients until they are soften. strain and squeeze them with paper towel
  2. squeeze bell pepper with paper towel
  3. mix all ingredients for dressing
  4. place tomato on the bottom, then onion, bell pepper. add in dressing and chill before you serve.
