sweat potato croquettes
When I was kid, my mom cooked croquettes. Usually
A croquette is a small fried food roll containing usually as main ingredients mashed potatoes, and/or minced meat and vegetables.
I used sweet potato instead of mashed potato, and Scorched both side with little amount of oil.
This croquette has lot of fiber and low calorie! good for kid’s snack too.
ingredients(make 1 serving)
- 1 sweet potato
- A
- 1/4 onion minced
- 3 shiitake mushroom minced
- 1 1/2 tablespoon ginger minced
- 2 teaspoon canola oil
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 2 tablespoon white sesame
- 1-2 inches mountain potato grate
- panko (breadcrumb)
- Oil
recipe (serves 4)
- place deiced sweet potato on the pot, add a little water (to cover half amount of sweet potatoes) and pinch of salt braise until liquid has evaporated.
- add oil to the pan and saute ingredients A with lowe heat.
- make 6-8 round shape croquettes shape. dredge in order with flour, yam, panko (bread crumb)
- Scorch in top and bottom with 2 tablespoon of oil.( but do not burn.)
