Soy milk creamy stew

When I was kid, I like to have milk and cheese…but I became allergy for daily product. My husband cannot have daily product with similar reason too.
So I use this stew with soy milk, but I make taste like cheese and creemy.
Soy milk + tahini + miso makes creamy stew!! This is also kids friendly meal.
Here is my recipe.
ingredients(serves 3-4)
- 1-2 any kind potato (I used 1 big sweek potato this time) cut into bite-size
- 1-2 carrot cut into bite-size
- 1 package mushroom
- 1/2 onion minced
- some green vegetable (such as Spinach, broccori. I used qing-geng-cai in this time)
- 2 teaspoon olive oil
- 2 cups water
- A
- 3 tablespoon tahini
- 2 cups soy milk
- 2 tablespoon miso
- 1 teaspoon salt
recipe
- In the pan, add canola oil, saute onion and mushroom until light brown
- In the pot, add 1, carrot, potato and cook over midium heat. after boiled, turn to lower heat andleave them about 10 min
- add spinach, ingredients A and cook with lower heat about 2-3 min until it boils.
