Vegetarian carrot dry curry

This dish is more like curry flovored fried rice than regular curry. I cooked this dish for vegetarian style, but my husband (he loves meat!) really love it!
This is simple and easy to cook!
ingredients
- 1/2 piece freeze-dried bean curd , soak in warm water for 20-30minutes
- 1/2 piece carrot, grate up
- 3 piece shiitake mushroom, finely chopped
- 2 teaspoon olive oil
- 6 piece cherry tomato, coarsely chopped
- 1 teasoon curry powder
- 1 bowl rice (I used brown rice)
- 1 tablespoon dried raisin, coarsely chopped
- 1/2 teaspoon salt
- soy sauce (adujst taste
recipe
- squeeze out excess warter from freeze-dried bean curd, and chop finely
- put olive oil saute carrot and shitake mushroom until wilted in frypan with low heat. add chrry tomato, 1, curry powder and saute about 1 min
- add rice and raisin and saute with them. add salt and soy sauce to adjust your taste
point
Please try to pick better quality of salt and soy sauce. It make you taste much better!
